Here is a recipe that I consider Basic. Because in addition to being an excellent accompaniment for fish, chicken and meat, you can mix it with pasta types farfarelli, garnish with a pizza or make a good tortilla vegetable. Quantity: for 4 persons
Ingredients:
4 cloves of garlic
1 beautiful eggplants
2 to 3 Zucchini (depending on size)
1 red pepper
200 gr of fresh mushroom
1 jar of asparagus
Salt and olive oil
Preparation:
In a pan with a drizzle of olive oil, lightly brown the garlic cut into thin slices
Add after the pepper cut into small squares
Then scratched and also cut Zucchini
Let Brown without soften, vegetables remain crisp
